Hi, my name is Chris Henry. I'm the founder of FreshPersonalChefService.com. Today, I'm going to make delicious mozzarella stuffed meatballs. These have a little surprise of delicious smoked mozzarella inside. Kids love these. They bite into them and the cheese oozes out, they're just delicious. So I'm going to start out with one half pound of sweet Italian sausages we're going to remove from the casing. And one half pound of organic ground beef. To that, we're going to add a sun dried tomato mixture in olive oil, which really helps moisten the meatballs. We're also going to add three cloves of garlic, which everything is better with garlic. A quarter cup of Italian breadcrumbs. Just a little pinch of red peppered flakes, however hot you want it, you can do two pinches. One tablespoon of tomato paste goes in here as well. And once shallot, which has been grated. And the grating, what that allows the mixture to do is really remain very moist. Because all the moisture from the shallot goes in there. So we're going to go ahead and mix this up with our hands. We don't want to over mix it. But we want to make sure that all the goodies are incorporated into all of the meat mixture. So here we go. Great. Mix all that together. OK now we're going to form our little surprise meatballs. About the palm of your hand you're going to use and form it into a ball, and then you're going to make a little well inside for the smoked mozzarella. You're going to place that in the meatball and form it again and go ahead and give it another roll. And then the second. And then you're going to continue to do this until all of the little mozzarellas are in their little nests. And then you're going to bake these in 400 degree oven for 15 minutes and you can also bake them just a little under and go ahead if you have a fresh homemade marinara sauce, you can go ahead and simmer them in there for the last part of their cooking time. So that's it. Smoked mozzarella stuffed meatballs.
