My name is Isaiah Frizzell from Feast, underground supper club in Los Angeles and I'm here today to show you how to make banana bread French toast in an unusual way and an interesting way. So we put a little spin on it just to give it something new. We're bored with the other stuff, let's do something new. So we've been soaking our Hawaiian bread with cinnamon, nutmeg, vanilla, a little bit of almond and milk of course and egg. That egg soaks up into the bread, it's a sponge and it helps elevate it. So what I'm going to do is cook a piece of this for you and show you why it's now banana bread French toast. So let's put this on the burner. Okay it's cooking up and because of all the love and care I put into things, I've actually made one ahead of time so that you can eat it now. Here's our French toast, see same shape. It's the same one and we're going to plate it and here's why it's called banana bread. What I've done is I've pureed bananas, fresh bananas, a little tiny bit of ascorbic acid or a citric acid, you can find that in most gourmet stores. Citric acid is actually called sour salt in the kosher section at grocery stores. So you can use the same thing, what it does is it stops the oxidation from fruits such as bananas, apples, pears or what have you. So I've made a banana puree because now we get like thousands and thousands and thousands of molecules of banana in our mouth and we eat this as opposed to just your one chunk. So what we're going to do is we'll add a little banana puree to our French toast, just a bit and now some almonds. Why? Because they crunch well. I've made you some special chocolate crunch which is basically just a sublet with a lot of cocoa powder to give it that dark flavor. You know and bananas and chocolate are long time friends. I think partially they come from some other regions and I love so see, now we've got this gorgeous masterpiece of French toast that's made with banana puree, let's add a touch of maple syrup for just a little extra sweetness, just a touch. And then what is better than whipped cream? I've been asking myself, my girlfriends, my friends, no one seems to know and here we have it. Banana French toast done the Feast way.
