Hello, my name is Justin Everett, I"m executive chef of Cavallo Point Resort and Murray Circle Restaurant in Sausalito, California; and today I'll be demonstrating chilled tomato soup with grilled grapes. To start our soup we're going to choose some beautiful red vine ripe tomatoes. And we just want to take those and quarter them nicely on this tray. Just spreading them out so they're evenly disbursed. Once we have all of our tomatoes cut and placed on the sheet tray lets go ahead and put a generous amount of olive oil. Lots of black pepper, salt, some fresh thyme, and some smashed garlic, and just be spread around. Once you have all your tomatoes placed on your sheet tray with your oil, your thyme, and your garlic, you just want to slow roast those for about 45 minutes to an hour. For the garnish for our soup we're going to take some red table grapes and we're just going to simply skewer them on a bamboo skewer. And just gently place them on the grill to char the skins. Once your tomatoes are out of the oven, about 45 minutes to an hour, they should be nice and soft and broken down. The first thing you want to do is remove the thyme and most of the garlic cloves. You can leave a couple but you definitely want to get the majority of these aromatics off of the pan. Once it's just your tomatoes you want to just take your roasted tomatoes and place them in a blender. You can add a little bit of veg stock or water just to thin it out. Then you want to puree on the highest speed for about 4 to 5 minutes. So once your tomatoes are completely pureed we're going to strain them through our fine sheen wok. It helps to take a ladle and push your soup through. Straining your soup gives it a nice velvety texture and removes any of the big chunks that we wouldn't want in there. To garnish our soup we want to take our grapes that we had grilled previously and just slide them off the bamboo skewer. I'm going to take a sharp knife and we're just going to mince these grapes. So to start plating the tomato soup we'll take a nice round mold in the middle and place our grilled grapes just around the outside of the mold. Then a couple of fresh cilantro leaves. A little bit of fine olive oil. And to finish we'll just pour our soup around it.So here we haved chilled tomato soup with grilled grapes.
