Hi, my name is Justin Everett. I'm executive chef of Covala Point Resort and Murray Circle Restaurant in Sausalito, California and today I'll be demonstrating how to store and refrigerate live oysters. It's important when you're selecting oysters that you ask for the harvest date from the suppliers. It's information that they can provide for you. It's recommended not to purchase oysters that have been out of the water for more than three days. Here we have three varieties of oyster. The first one is a miyagi from California. It's a large oyster that is very sweet and with a briny finish. And the second oyster is a kumamoto oyster which is a small cup shaped oyster that is very sweet and meaty. And our third oyster is from the east coast. This is from New Brunswick, Canada, and this is a beausoliel. Very clean oyster, crisp and briny. It's important when purchasing oysters that you inspect them carefully. If they are open, do not open or do not eat the oyster. Always smell it. It should not have any off smell or a stink of fish. You always want to also rinse your oysters and clean them up a little bit. You can use a brush or just your hands. Just remove any debris that might be left on the oyster from shipping and harvesting.
