Hi, my name is Justin Everett and I'm Executive Chef of Cavallo Point Resort and Murray Circle Restaurant in Sausalito, California. Today, I'll be preparing grilled prawns with pickled cucumbers and aioli. So, to start our grilled shrimp, we're going to begin with a little bit of simple syrup which is equal parts water and sugar that's just boiled, some extra virgin olive oil, some soy vinegar, lemon juice, fresh garlic, some fines herbes and some chili powder which is cayenne. We'll go ahead and incorporate that well. Once that is mixed together well, we can go ahead and add our prawns right in there. Now, you can go ahead and let these sit in this nice marinade for eight to 12 hours. So, these we just want to skew them on, all the same direction before they go on the grill; about three pair will be great. Once they're all skewered, you can place them on the hot side of the grill at an angle and start the cooking process. To plate our shrimp, we'll go ahead and start with a few pickled cucumber rounds. This is just cucumber that's been peeled and marinated in a little rice wine vinegar. Take a little aioli, cut that down and then our shrimp. Place it there. Little ground sumac on top of our, and daikon, purple daikon sprouts to finish our plate. And there we have spicy grilled prawns with pickled cucumber and aioli.
