Hi, I'm Anne Shaeffer with Sulpice Chocolat, and I'm going to show you how to make butter pecan pastries. Our first step in making the filling for the butter pecan pastry is just to add half a cup of brown sugar, a tablespoon of white sugar, and a half cup of butter. We can also add a pinch of salt. And then I'm just going to start to heat it up so it melts. So you're going to want to have it melting on kind of a lower speed so that the butter has a chance to melt without burning up the sugar. It shouldn't take too long. So after a couple minutes all the butter is going to be melted, the sugars are going to be melted and it's going to come together and it's going to start to have a nice little bubbling, and that's what you want. It's nice and thick and delicious. Now what I'm going to do here is take a tablespoon of heavy cream and I just added a quarter teaspoon of vanilla. And you're going to add it. But what I did here is I heated the cream a little bit before adding, because that's going to help prevent you caramel from setting around cold cream. So see how it loosens it up a bit? The caramel sauce. Very nice. Let that be a nice incorporate it, which it is. And now I'm just going to go ahead and add a cup of pecans. Mix that up pretty well too. And this is the filling for our butter pecan pastry. Great so now we're just going to go ahead and fill our pastry. So what I have here is the filling and I'm just going to scoop a little bit. Now we just went ahead and filled it a little more than tablespoon. And we're just going to press the edges down a little bit so that the filling doesn't ooze out while we're cooking. Now what I'm going to do is just take a little bit of this egg wash. It's just one egg mixed in with a little bit of water and just paint around the outside. This is going to help give it a nice brown coating. It's also going to help to keep the layers together while it's cooking in the oven. Great now we're just going to go ahead and transfer this pastry on to a baking sheet. And we're going to go ahead and put it into a preheated oven at 350 degrees. You're going to want to go ahead and take this pastry out after it's a nice and golden brown, which should usually take about 25 to 30 minutes.
