Hi, my name is Anne Shaeffer with Sulpice Chocolat. Today, I'm going to show you how to make a French cream filled pastry. Great now we're going to start with pastry cream filling. What I have here is four ounces mascarpone cheese and this is half a cup of pre-sifted powdered sugar. Just going to go ahead and mix those in there. This is something that you're going to want to you can make this in a stand mixer or using a hand mixer too. You're just going to want to mix together the powdered sugar with the mascarpone cheese until it's really light and airy. OK this is looking pretty good. Now what I'm going to do is add some whipped cream. This is half a cup of whipped cream that I added two tablespoons of sugar to and whipped together.but you can go ahead and use premade whipped cream if you'd like. I'm just going to mix these together until it is even lighter. But I don't want to mix too much because we don't want to get rid of all that air and the lightness that's in the whipped cream. OK now I'm just going to go ahead and fill our pastry shell with the French cream that I just put inside of a pastrybag. Put the lid on, and go ahead and drizzle it with a little bit of chocolate cause. Go ahead and add as much as you like. Here we have our beautiful French cream filled pastry.
