Hi, I'm Lauren Imparato, Founder and Owner of I.AM.YOU. At I.AM.YOU, I teach Yoga and I also work as a Nutritionist. I'm originally from California and I live in New York, which means I love salad and I grew up loving fruit. So today, we're going to make you a fruited spinach salad. Are you ready to get fruity? I am. so, for this fruited spinach salad, we're going to start with the base of raw baby spinach and wilted baby spinach. The reason for that is that the wilted spinach will add a more warming effect to this incredibly cooling and sugary salad. To make the wilted spinach, I put it in my pan before we got here for about five minutes with the lid on top. No olive oil, just the spinach. Remember it shrinks, so you probably have to put more than you think. So, we're going to start; I'm going to put a base of baby spinach raw, again, optional and then wilted spinach. If you don't like the wilted spinach, just use the raw. Then, we come to the fruit and I have pitted cherries, red being white, whatever your type is and throw it on top. I'm going to add some green grapes and then slivered almonds. Then, I'm going to take a lemon and I'm going to be pretty generous with the lemon squeezing. You might have to use one, whole one, maybe one and a half, two, depending on your lemon. And I'm going to let that all marinate; I'm going ot to toss it a bit. You can use your hand if you want to try and work the lemon into the fruit or you can toss it otherwise. My sister's always been really into using her hands for cooking; I don't know, I'm a little more New York finicky like that. Then, I'm going to take goat cheese and depending how you'e going to serve it, if you're serving it for a dinner or more formal event, you can add the discs on top or you can chop it up. I'm going to add the discs on top and then I'm going to just let the lemon juice marinate it. Optionally, you can add some salt; in Latin America, they add salt to fruit, to counter the effects of the sugar. So, use just a little bit which I will add. And voila!
