Hi, I'm Lauren Imparato, founder and owner at I.AM.YOU. At I.AM.YOU I teach yoga and I work as a nutritionist. I am a Cali girl who loves to travel and I am going to make you the most Greek inspired cucumber spinach salad. You ready? So first we're going to make our prep side salad and this is something that you're going to be able to keep on the side to have as a snack and you're going to add it to the main salad. You can also eat it the next morning, the next day, whatever it is. So you're going to start with a cucumber and have I have some pre-cut slices for you and you're going to cut it into small slices and you're going to put it into a bowl. Then you're going to take a tomato and chop that up into slices and add that in. If you like red onion, you're going to add red onion. It has a little bit of tang, olive oil, and be pretty generous with the olive oil to help your body digest it more, pepper to taste, you don't need to, salt on this one to taste if you like. Take a spoon, you're going to mix it all up. If you have extra olive oil at the bottom, really don't worry it's going to make it delish. You're going to take your bowl, your larger bowl and add a bed of baby spinach and you're going to take the lemon, take a lemon and you're going to squeeze the lemon on top. If you don't have a juicy lemon, just do it like this and I'm going to add my side salad which is actually going to be the bulk of this salad into the spinach salad. Again if you have extras, you have extras. Now I'm going to toss that up, doesn't it look amazing. Look at all the colors, delicious. Set this aside and get ready for our key ingredient here which is feta cheese. You can buy it crumbled or in chunks, depends again what sort of look you're going into or what your efficiency level is and what you have accessible and you're going to throw that all in. Actually I'm going to go for it today.
