Hey, I'm Lauren Imparato, founder and owner of I.AM.YOU. At I.AM.YOU, I work as a nutritionist and teach yoga and being a California girl, I absolutely love all types of salad. Today I'm going to teach you how to make a spinach, cashew and mozzarella salad and it's going to be amazing for all the different textures we're going to put in. You're going to start with a bed of baby spinach, it's best especially if you buy it pre-washed. It saves you some time. You're going to pour some into the bowl then you're going ot need some mozzarella. I've already sliced some but I'm going to continue to slice some more and then dice it into chunks and you're going to add that in. Then you're going to take cashews, and for the cashew, I prefer whole nuts just because it gives you a little bit more texture when you bite into the salad so it's not so like I'm eating a salad, it's more like I'm eating a meal. So sprinkle the whole cashews around, salted or unsalted, salted will obviously give it a little bit more taste, yellow red pepper, take, half and scoop out the seeds and slice it. Then I'm actually going to use some cilantro or parsley whatever you like. I prefer cilantro but parsley would work easily as well and sprinkle it in. In a small bowl, I'm going to take olive oil, balsamic vinegar, whisk it up and dress the whole salad. Then I'm going to pepper to taste, toss and wallah, mozzarella, cashew, spinach salad from Lauren Imparato at I.AM.YOU. This would go great with a light red wine, like a Pinot Noir or a light rose.
