Hi, I'm Claudia from Realfoodies.com/Tastybits and we're here today at Kitchen on Fire in Berkeley, California and I'm here to show you how to make a lemon infused butter or in technical terms, a compound butter. So what you're going to need to make a really yummy compound butter is of course, lemons, a couple of lemons would probably do, two to three lemons, a microplane or just a regular lemon zester, lemon zest, salt, and unsalted butter. So if you're going to go to the trouble of making a lovely compound butter you might as well start with high quality butter. So here we have our lovely softened stick of unsalted butter. I like to use unsalted butter and add as much salt as I want and then we have our lemon zest and a little bit of salt and I'm going to add those both to here and mix them with a fork. What's great about compound butter is you can just do whatever you'd like to it. You can add garlic to this, herbs, or just keep it simple with the lemon peel. It's going to have plenty of flavor. Then once you're done you can use this on fish, on pancakes, whatever you'd like. So now we've incorporated all that lovely lemon zest into the butter, going to put it down here and you could use parchment paper, wax paper, plastic wrap to do this. You just want to position it a little bit, kind of like this way and I fold this over like this and I'm going to use this little pastry scraper that costs me about 49 cents at the local restaurant supply store. You can also use one of these nice metal ones. I'm going to hold this here and then I'm going to pull this back and since the butter is soft, you see how it's spreading sideways, I want to make like a little tube with it. That's about the right size. You're going to fold it over, twist the edges like this, good, perfect little log. You can stick this in the freezer and anytime you need a little tiny bit of compound butter, you can cut off a little piece and put it on anything you want. So here we have our beautiful little log of compound butter. It's ready for me to stick in the freezer. These are wonderful to give away as gifts as well. So remember, when live gives you lemons, make lemon butter.
