Hi, my name is Stella Metsovas and I'm a health and nutrition expert and my specialty lies within the Mediterranean diet and today I'm in the beautiful Laguna Beach Culinary Arts Institute. I'm going to show you how to make a Greek salad using cucumber and feta. Here's a trick my grandmother used to do. She would peel the cucumber and leave a little bit of this green part intact because that's where all the fiber is. Just make sure if you do it this way that you purchase an organic cucumber, okay non-organic cucumbers have a wax that you don't want to consume and that's found on the skin but if you get organic cucumber you're getting all these beautiful nutrients in the skin. So now what I'm going to do is I'm going to cut off the end, cut it in half, there we go. Look at this beautiful green color. It's so pretty. Cucumbers are really rich in minerals. They're basically full of water, about 90% of a cucumber is water, okay, there we go, put it in this little bowl, cute little salad. Now I'm going to add a little bit of red onion on top that I've pre-sliced. It's up to you how much you'd like to add. I'm going to add some fresh Kalamata olives. These are organic Kalamata olives. One of Greece's biggest experts are olives and olive oil. Now I'm going to put a little bit of feta on top. Feta is one of my favorite cheeses, a little bit of mint and I'm going dress it with my vinaigrette that I keep in my refrigerator all the time to make my life easier, there you go. It's olive oil, lemon, sea salt and pepper, so simple and so good for you and here you go, a Greek cucumber and feta dish. Kalioiksy. Enjoy.
