Hi, my name is Stella Metsovas and I'm a health and nutrition expert and my specialties are within the Mediterranean diet and today I'm shooting at beautiful Laguna Beach Culinary Arts Institute and I'm going to show you how to make Greek feta salad ideas. Now many times people don't correlate watermelon with feta but I can tell you it's one of the tastiest tastiest salads you'll ever have. So, we have some spears of feta and we're just literally going to cube them. I like to make a diagonal cut just to make it look pretty, okay, watermelon in the Summertime is so great to have simply because watermelon is rich in minerals and pairing that with a salty feta is so pleasing to your palette, okay and I'm just going to place the watermelon in the bowl. Now I'm going to take the feta and I'm going to cube it a tiny bit smaller, a goat cheese feta is definitely more rich than a cow based feta. I prefer goat cheese and you can also use sheep. We have the Kalamata olives. Today I'm actually using Cat Cora's organic line of Kalamata olives. They're so good. Just make sure they're pitted. You don't want to get any of that pit in a salad because there goes your tooth and I have done that before and yes your tooth will chip, okay. There we go. Now I'm just going to grab a nice fresh leaf of basil. The best way to do it so you don't bruise the leaf is just tear it off, adds a different dimension to the dish, of course, it's an herb so you're going to taste something a little sweeter and it combines perfectly with the watermelon. Now to finish the dish I'm going to drizzle a little bit of olive oil on there and you don't need much sea salt because of the feta but I like to put a little bit. It just enhances the watermelon even more and now the star ingredient which really brings out the depth of flavor is cracked pepper and there you go. Here's another great Greek salad feta idea. So simple to make, purple cabbage that I've already shredded. Look at that color, isn't that beautiful, some sun dried tomatoes. When tomatoes are not in season I always use sun dried tomatoes, fresh mint from my garden and a tiny bit of feta that I'm literally just going to crumble on top, okay and I always have this vinaigrette in my refrigerator which is literally olive oil, lemon, sea salt, pepper and there you go.
