Hi, Chef Jason Tilmann, executive chef, Triomphe Restaurant, here at the Iroquois Hotel, 49 West 44th Street between 5th and 6th Avenue. Today ladies and gentlemen we're going to do iceberg lettuce, one of my favorite lettuces there is out there and we're going to do an iceberg lettuce salad with poached lobster, blue cheese, peas and tomato mint vinaigrette so stick around. Iceberg lettuce salad, we're going to start with a little bit of our tomato mint vinaigrette on the plate. We have our nice head of baby iceberg lettuce. We're going to hit that with a little bit of salt and a little bit of pepper, okay. We're going to put a little bit of blue cheese in there, alright, simple blue cheese, alright. Now we have our lobster meat with a little bit of lemon zest and our tomatoes, we're going to go a little bit of extra virgin olive oil, a little bit of salt and a little pepper on this one. We're going to mix that all together, okay and we're going to set that all around nice, okay, really simple, easy, this is a great great Summertime salad with that fresh lobster meat, your tomatoes, the tomato mint vinaigrette and then we're going to add some nice fresh English peas, okay and a little bit of this blue cheese dressing, really simple, really easy. So there we have our baby iceberg lettuce salad with tomato mint vinaigrette, poached lobster and blue cheese.
