Hi, Executive Chef Jason Tilmann here at Triomphe Restaurant in the Iroquois Hotel; 49 West 44th Street between 5th and 6th Avenue. Today, we're going to kind of talk to you about how to make sure ribs are less fatty, which kind of sounds a little bit crazy because it's kind of a fattier cut of meat. So, the best way to describe it is to trim it a little bit and to cook it low temperature for a slow, long amount of time and it's going to render all that fat and you're going to be left with a really nice moist juice piece of short rib. So, what we do with our short ribs to make them less fatty at, at the restaurant is we trim them up really really well. We serum, we slow cook them for a long period of time in a slow oven, all that fat comes out leaving us with a nice tender, moist piece of short rib. Okay. So, it's really kind of simple. It has a lot to do with the technique and the, and the timing. Okay. So, here we have our braised short ribs and I'm going to kind of break it open a little bit so you can kind of see. See how that meat is very very tender and it's, and this is only a spoon; not a knife, it's not a, a, a fork, it's spoon. And look at how tender and moist that is, it comes right off. Okay?
