Hey, BC here at Las Perlas, downtown L.A. So, you don't have margarita mix and you need to make a margarita. Hmm, how are we going to do that? Well, here at Las Perlas, we have one of our signature drinks being a 400 rabbits. We don't have margarita mix that we use; so this is how we do it. All we're going to do is we're going to take four blackberries, you can use raspberries, boysenberries; in this case, blackberries and we're just going to put them in the glass. We're going to muddle those bad boys up, just enough that they're just pressed down. Then what we're going to do is we're going to get ourselves some shaved ice. Wait right there. Take some shaved ice, fill up that glass, put it off to the side. Then, what we're going to do is we're going to take our tin. And in our tin, I already have measured for you two ounces of tequila, we'll use El Humidor; we're going to throw it right in there. One ounce of lime juice; get these out of the way; three quarter ounce of egg whites, that's right egg whites. Dan-dan-dan! Scary, but tastes amazing. And three quarter ounce of our port wine syrup; throw that right in there. Then, we're going to just take one bar spoon of agave nectar, give it a little sweetness. Tap that off. And now what we're going to do is we're going to give it a nice dry shake. You want to shake this vigorously because of the egg whites. If you don't know what shaking vigorously means, it means shake the heck out of it, "Lal-lal-lal-lal". Okay. So, upon shaking it, we'll just add some ice to it. Now, we're going to give it a wet shake. Again, shaking it vigorously as you can. Now, once we're done shaking, we're going to strain it and pour it right over our glass that we set to the side with the shaved ice and the berries on the bottom. Finish, not quite. Then, we're going to add three quarter ounce floater of Pinot Noir, any red wine will do, but in this case, Pinot Noir. And lastly, we're going to take our Angostura bitters and we're just going to drop it on top or in this case, spray it on top; and also on top of the bar. Clean up that mess. Add a blackberry for decoration, add a nice edible flower on the side and your straw. And behold, 400 rabbits, a margarita without margarita mix, right here at Las Perlas.
