Hey hey, BC here at Las Perlas, downtown LA. Now let's say you come across a margarita that's way too sour. You need to balance that bad boy out. Let's see, right here, our margarita came back way too sour. So what's the secret to balancing out the sourness? A couple things, one add more tequila, two, add more of your orange liquor, three, add more sweetener, whether that's Agave, sugar or any sugar substitute and three, is probably the best bet. And lastly four, more ice, stronger shake, waters down the drink balances out more sourness. So let's say we actually measure out a little but more Agave, we'll put about, we don't want it too sweet. So we're going to just add about a quarter ounce of Agave Nectar, Royal Combier or orange liquor, I'd say we add about a quarter ounce of Royal Combier and as far as tequila we'll just add about let's say one ounce. So we're going to add that to our drink, just pour it right back in there, get a fresh glass though, rim it back up, get your lime, put it right around the edges, a little salt. We'll give this a shake and pour it right back in the glass. Just give that a try, perfect, not too sour, not too sweet, just right. And that is how you balance out an over-sour margarita.
