Hi, I'm Rona Lewis, Fitness and Lifestyle Coach and Healthy Chef. Today, we're going to cook broiled salmon with lime. Now, the secret to using lime is that you can use it in more than one way. You can put it on the fish before it starts to cook and you can use it in a butter sauce afterwards so you get that wonderfully rich flavor from the butter with that kick from the lime. Now, this is all you need to make this dish. Six to, to eight ounce piece of fish, half a lime, about two ounces of butter and some salt and pepper. Now, what I'm going to do, I'm going to take half of the lime and I'm going to squeeze it over the fish. Now, the beautiful thing about any kind of citrus is that it starts to cook the fish before you even put it in the broiler. The next step, little salt and pepper; so, it's actually marinating while I'm prepping it. Now, all you do is setup your broiler pan with a little olive oil and I like to use this spray because you can use it over and over again and it's good for the environment. Place your fish on the broiler pan and then you're going to broil it. Now, I'll show you in a second when the butter comes in. I'll be right back. Now, we're going to work on the butter lime sauce. Pretty easy. It's exactly what the recipe says. You're going to take half a lime and squeeze it into the butter. Now, you can either melt it in the microwave, it's the easiest way to go or you can put it on the stove, but you melt it and it looks just like this. When the fish comes out of the broiler, it has a beautiful color and that lime has already started to infuse the fish as it cooks. And all you do here is gently pour it over and just maybe a little bit on the side to make it pretty. And there you have it broiled salmon with lime.
