Hi, I'm Chef Mike Neylan. I'm a Tuscon personal chef and I'm going to show you how to prepare a pizza crust made with cornmeal. What you need are white corn meal, water, olive oil, salt, sugar and yeast. You add your water first, then your olive oil, then your salt, sugar, and your white corn meal. You don't want to add your yeast directly to the salt because it will kill it. So that's why you add the flour first. Then you're going to mix this for roughly three to four minutes until it pulls away from the bowl and it's a nice dough mass. Now this has been mixing for about three or four minutes. Nicely away from the bowl. Now this is going to have a little bit more of a softer consistency than regular dough because of the corn meal. But you're going to work with your hands on a little regular flower. Shaping it into a ball, getting out any air holes and seams in the bottom. And that's how you prepare pizza dough with white cornmeal.
