Hi, I'm Chef Mike Neylan. I'm a Personal Chef in the Tucson, Arizona area, and today I'm going to show you how to properly shape pizza dough. Here we have a, a whole piece of pizza dough which I'm going to cut into half for two pizzas. Now, you have two pieces of pizza dough. You're going to knead the dough, grasping it into a ball and the main objective is that in the bottom not to have any crease 'cause what will happen then when you're shaping your pizza dough is you're going to get holes in it. Now that you have your dough balls in a nice even, no creases on the bottom balls, what you're going to do is wrap them in Saran wrap and put them in the fridge for a couple of hours. And then, you're going to put them into the refrigerator so they can rest for two hours, two to three hours to make sure that they don't have memory when you roll them out and the dough doesn't spring back into shape. And that's how you make pizza dough.
