Hi, my name is Chef Mike Neylan. I'm a Personal Chef in the Tucson, Arizona area and today, I'm going to show you how to make New York style foldable thin crust pizza. The ingredients you need are a good pizza sauce or marinara, your favorite pizza cheese, Mozzarella, Smoke Provolone, Parmesan and a small piece of pizza dough, preferably 12 ounces in measure. You want to roll it out very thin, that's the secret to a good New York style pizza. Gently taking it up and with your knuckles and our thumb, pulling out the edges very gently. Just takes a little bit getting used to 'cause you don't want to make a hole in the dough. And you're going to take your sauce, spread it. The trick with a New York style pizza is not to add too much sauce, just cover the base. Then, you're going to add your cheese, again covering the whole base but not a real lot. Its a thin style pizza, the New York style pizza. And you want to keep the toppings to a minimum. Then, put the cheese all the way towards the edges of the crust, making sure that it is evenly covered. Then, you want to put the pizza in the oven. I have preheated the oven to 500 and put my pizza stone in about 45 minutes ago. And you take your dough, you want to make sure it slides, so you won't have an accident trying to get it in. Now, that pizza is going to bake for 10 to 12 minutes, turning halfway through so it's evenly coated, evenly cooked on both sides. Then, you take it out and you have a New York style thin crust pizza. Now, we're going to check the New York style pizza. Perfect; crust is nice and puffy. That's how you make a New York style foldable pizza.
