Bonjour! I'm Chef James and we're going to make a beautiful French lobster salad for you today. So, let's start out with our ingredients, shall we? So, we have some fresh mosh, we have lemon that we will zest, a roasted pepper, a shallot, a haricots verts, yellow wax beans. So, now we're going to use our zester, so I have my lemon here, we're going to press firmly against the lemon and the zest will just come right off. So, now we're going to build our salad. We have our haricots verts and our yellow wax beans. So, what I did was I blanched the beans in boiling salted water for about a minute and I shocked them in iced water right immediately after out of the pot. Now, we add our haricots verts, our yellow wax beans, our roasted diced peppers and our shallots. We are going to season with our kosher salt and some fresh ground black peter, pepper. I'm going to add my champagne vinaigrette, little extra dressing that I would normally do. And now, we're going to lightly cook the beans so we get all that goodness in there. So, I have my plate and now we're going to take the beans; you're going to kind of want to line them up straight if you can as possible and line them up on the plate. And now you'll see at the bottom here, some of our ingredients down at the bottom. So, I'm going to take those roasted peppers and put them over the top of the salad. So, now we're ready for our lobster. So, we see the lobsters poached, so what I'm going to do is I'm going to cut down section by section of the lobster to make medallions. So, section by section like we've talked about to make beautiful medallions of the lobster. So, now we're going to mix our lobster medallions. So, I've, I already have our lobster medallions in the bowl, so I'm taking a pinch of parsley, pinch of chive, just a touch of kosher salt, one turn of crack pepper and some extra virgin olive oil. So, now we're going to get that all mixed together and now we're ready to plate our salad. So, what I've done is I've rebuilt the lobster in the bowl so we can put it back together on the plate. So, I'm taking section by section of the medallions and we're just building our stairway of lobster onto the plate. Okay. Now, I have my fresh mosh that I'm going to garnish my salad with. So once again, a touch of salt, one spin of pepper and a light drizzle of olive oil. We're just going to mix this up with our hands and we're going to put this mosh right in the middle of the plate as I use my hand to kind of mold the, the salad to leave it on top. So, here we have our beautiful French salad. So, I'm just going to drizzle a little bit of our champagne vinaigrette around the perimeter of the plate to give it the final garnish. And there you have it, our French lobster salad. Bon appetit!
