Hi, I'm Daneen Green. I'm a private chef and a caterer, and today we're going to make a simple Hollandaise sauce. So we'll start with three egg yokes, a 1/2 pound of butter, melted and hot, a pinch of salt, juice from 1 lemon and about 1/4 of a teaspoon of mustard. We start by putting our eggs into the bowl with the lemon juice and you want to blend with your immersion blender until the yokes and the lemon juice are incorporated together. You're going to add your mustard and a little bit of salt and blend again. Now you're slowly going to add in your melted butter until the yokes and the butter come to emulsion. After a few minutes all the butter will be incorporated into your Hollandaise. It should be slightly thicker than it was. And you can use this on any breakfast item, poached eggs, you could use it over asparagus. And there you have it. I'm Daneen Green, and this has been how to make a simple homemade Hollandaise sauce.
