Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a broccoli feta orzo salad. This wonderful salad uses a lot of my favorite ingredients. You got the pasta - can't go wrong with pasta - broccoli, you got a fresh vegetable in there, cheese. So, great balance. I have some broccoli here that I blanched. So, I just dipped it in boiling water for less than a minute. You notice it turns a brilliant dark green color. Once it starts losing its color, you know you've overcooked it. And, I'm going to mix that with the orzo. I cook the orzo. Orzo is a pasta that looks like large grains of rice. Going to add some olive oil, some crumbled feta cheese, some chopped fresh parsley, chopped green onion, some chopped red onion as well. Little bit of lemon juice, and a little bit of salt. Doesn't need much salt, because the feta's already salty. And, there you have a broccoli, feta, and orzo salad.
