Hi I'm Brandhi, the vegan serviette, from "Brandhi's Bites" and today we're making vegetarian coconut brownies. The first thing you need to make sure you do is pre-heat your oven to 350 degrees. Now how do you make a brownie healthy? The easiest way is to eliminate all of the dairy ingredients. So that's your milk, your butter and your eggs and I know you're going to be tempted to put all of that in your recipe but we're not going to cross that line today. We're going to focus on our egg substitute. Today we're going to be using flaxseed meal and water. So you're going to combine three tablespoons of water with two tablespoons of flaxseed meal. You're going to make sure that you whisk that together really nicely and you're going to set that aside until the mixture is gooey or gelatinous. Now in a large bowl you're going to combine your seven tablespoons of cocoa powder, your one ounce of semi sweet chocolate chips, let's get that in there, your one teaspoon of instant Espresso powder and your three fourths teaspoon of salt. You're going to combine that with a quarter cup of boiling water. So you're going to make sure that you mix these ingredients until your semi sweet chocolate chips have melted. Next, you're going to combine your sugar which is one and a half cups with your one and a half teaspoons of vanilla and your melted nondairy butter. This is six tablespoons. You're also going to combine your egg substitute which was your flaxseed meal with your water. You're going to mix all of these ingredients together until smooth and then at the very end, you're going to add your flour and baking soda mixture that was one and three fourths cups of all purpose flour and one fourth teaspoon of baking soda. You're going to mix this together until your batter becomes really thick, in fact, you may have to use your hands to really mix it all in there. So now that you've got the vegetarian part down, let's add the coconut. You're going to add a half a cup of coconut to your basic brownie mix, give it a good stir. You're going to add your batter to your pan on your rack at the lowest level in your oven for 35 minutes and once it is cooled, you'll be left with a delicious vegetarian coconut brownie.
