Hi, I'm Ellen Adams from Redhotdish.com, and today I'm going to show you how to make a sweet potato salad. So I've got two sweet potatoes and I peeled them and I cut them into quarters about that size, little pieces and then I boiled them for about 20 minutes. You can check them, 15 to 20 minutes, whenever a knife will slide easily through your sweet potato. Then you'll know they're done and right now I'm going to add a cup of mayonnaise. Okay, so we'll get this mayonnaise in here and then there we go and now I'm going to add, I've got a half a cup of golden raisins. You could certainly use regular raisins if you have them. I've got a half a cup of chopped pecans and certainly you could use almonds, you could use walnuts, whatever you like, about a half a cup of red onion to give it a little zing to it, same with some celery to give it some crunch. It's about two celery ribs all cut up and I've got about a quarter teaspoon of ginger. This is a very nice accompaniment to sweet potatoes and half a teaspoon of salt, a little bit of pepper, just a couple of turns, it's about an eighth of a teaspoon and then I have some fresh lemon juice. So what you do is you take a fresh lemon, roll it on a cutting board to kind of break up the pieces inside, give it a slice right down the middle and what I do so you don't get any of the seeds, hold your hand over it, just give it a squeeze and now if any seeds come out, they're going to land in your hand and then you let the juice flow through your fingers and see there's I've got two seeds, three seeds in there right now and we're just going to let that juice come right through my hand. So it's about maybe a tablespoon of lemon juice. It's about a half of an average size lemon. So now I'm just going to fold in that mayonnaise and coat all of our potatoes and get that celery and those beautiful raisins all mixed in. So this is a wonderful change from traditional potato salad. It's got that beautiful orange sweet potatoes. And here we have sweet potato salad.
