Hi, I'm Ellen Adams from Redhotdish.com, and today I'm going to show you how to make a Bavarian potato salad. I've got my potatoes here and I've got about two pounds and they're still warm which is key when you're making German potato salad or Bavarian potato salad and what I have here is when I cook them I quartered them and that's a little big for potato salad. So I'm going to cut them again. I don't want to have to eat my potato salad with a knife and fork and cut it so we're going to cut them into bite size pieces and add them to the bowl. Now I'm going to make the marinade for our potatoes and I'm going to start with a quarter cup of white vinegar and I've got a pinch of sugar to give it a little sweetness, a pinch of salt and I'm going turn in a little cracked pepper, it's probably about an eighth of a teaspoon and then we'll give that a little stir because we want to dissolve that salt and dissolve that sugar. Okay, and now I'm going to add a quarter cup of canola oil and it's important you don't want to add olive oil because that will definitely change the taste of the salad so I'm just going to use canola oil and just give that a quick stir to combine all the ingredients. The next step is I've got three quarters of a cup of hot chicken broth and I'm just going to pour that right over our potatoes. It's going to keep them nice and warm. There we go and now I'm going to add our marinade and I'm going to just dump this in. Now my sugar and my salt are all dissolved which is important. You want that to be dissolved before you go ahead and add this to the potatoes so there we go. We've got a nice dressing on them and now I've got a quarter cup of butter, we'll just add that right over the top. I've got about one red onion. You can certainly add as much as you like. This one is pretty strong. It's going to give it some nice flavor and some nice color and then I've got some chopped parsley, makes it look pretty, gives it a little zing, a little freshness to it. So that is our chopped parsley and then you just fold it all together and now remember this is hot so it's perfect served with a hot meal. It's got a lot of marinade on it and there you have Bavarian potato salad, minus one potato.
