Hi, I'm Ellen Adams from redhotdish.com, and today I'm going to show you how to make a diet potato salad. So this potato salad, I've got my white potatoes. And when I cooked them I quartered the potato but that's a little too big to eat. So what you are going to want to do is cut these pieces a little bit smaller so they are more bite size. You don't want to have work to eat your potato salad so. I've just boiled these when I quartered my potatoes I boiled them oh I would say probably 15 minutes. But you'll know when a knife easily slides into a potato then that's done. You don't want to cook them too long cause then they'll turn to mush. Then your potato salad will be, won't hold up very long. So there we go, those are our potatoes. Now for this I'm going to add a quarter cup of light mayonnaise. Alright now I have a quarter cup of sour cream. And this is the no fat kind. We want to keep our calories under control for this potato salad. Alright now I have a tablespoon of honey mustard. I'm going to add a little sweetness to our salad. So we'll get all of that in there. I'm going to add a quarter teaspoon of black pepper. And that's just a few turns of a pepper mill. That's good. Alright I have half a teaspoon of salt. I've got one green onion that's been cut up. And some celery, about a third of a cup that's about one large rib of celery. It's going to go right in there. And to really jazz up with the green I've got about a tablespoon and a half of parsley that I chopped. Alright. So that is our potato salad. And now you just need to give it a quick fold. So I just want to try and cover all the potatoes with our dressing. I'm just going to go from the bottom and fold it over. It's an easy way to make sure you get all the potatoes. It prevents you from them breaking up cause you are nice and gentle. And just fold it over. And then when you get it all coated very nice you can put on a little paprika. That jazz it up a little bit. And there you have a diet potato salad.
