Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a Lebanese potato salad. So it's a potato salad with a lot of light flavors, parsley and mint. I'm also going to use some tomato and some cucumber which also going to really brighten up the potatoes. So I'm going to start with redskin potatoes. I've chopped them into bit size pieces and then I boiled them for five to ten minutes. That's long enough to soften them up and it's not long enough to make them mushy. Now here I have some chopped cucumber, great Mediterranean salads. I'm going to chop some tomato. I'm going to chop some parsley and also some fresh mint. This is spearmint. And I'm going to season this very simply with some lemon juice, and some olive oil, some salt, and some black pepper. Toss it up together. This is going to be tasty right away. It's going to even tastier in 10 or 15 minutes once the flavors have a chance to soak into the potatoes. And there you have a Lebanese potato salad.
