Hi, I'm Devra Gartenstein with Quirky Gourmet, and today I'm going to show you how to make a kosher potato salad. Now there are a couple of things you want to keep in mind to keep your potato salad kosher. First of all you want to make sure your potatoes don't have any bug holes in them because you want to make sure there's no bugs in anything because you're not supposed to eat any living things. So you want to look closely at the potatoes before you cut them up and cook them. And here I have some potatoes that I have cut up and cooked. I cut them into bite sized pieces and I cooked them for five to ten minutes. That's long enough to make them soft but not long enough for them to be mushy. OK now I'm going to marinate this. I'm going to use a red wine vinegar and you want to look at the label and make sure it's a kosher brand of red wine vinegar because a lot of wine vinegars are not kosher. Now if you can't find kosher wine vinegar, use a lemon. It'll add some nice acid and it'll keep things kosher. Now I'm going to add some olive oil, some dried dill, some salt, and some black pepper. We can add vegetables to this, you can add celery, pickles, kosher pickles, peppers, all kinds of options. But there you have a very basic kosher potato salad.
