Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make an herb and potato salad. It's nice to use a lot of herbs in a potato salad because potatoes have such a deep earthy, kind of neutral flavor. And herbs can really perk them up. So I'm going to use some flat leaf Italian parsley. Now it has a lot more flavor then the curly excuse me, the curly leaf parsley. And you know you really could use either but I prefer the flat leaf. And I also have some fresh oregano here. And fresh oregano has a really strong flavor. So you know if you use too much of it or if you don't chop it up small it can be obnoxious. But if you use just a little bit of it and balance it just right with the other ingredients it's going to be lovely. So there's the fresh oregano and here's the parsley. And you can use all kinds of herbs in here. You can use fresh basil, you can use chives, you can use fresh thyme. Yeah just whatever you have available, whatever you enjoy. I'm also going to use a small sweet pepper. And you can use any kind of pepper as well. I just like to use these as much as possible when they are in season. They're really sweet I love them. So I'm going to cut these into thin strips. And then I'm going to mix them along with the herbs. And then I'm going to add some red wine vinegar, some olive oil, a little bit of salt, and a little bit of black pepper. Mix that up and there you have an herb potato salad.
