Hi, I'm Devra Gartenstein with "Quirky Gourmet." Today I'm going to show you how to make a Salvadoran potato salad which uses hard boiled egg and some nice cheese and bell pepper and green onions. So I'm going to start with red skinned potatoes. I've cut them into bite sized pieces. I cooked them for five to ten minutes which is long enough to make them soft but not long enough to make them mushy. I'm going to chop up a hard boiled egg. I'm going to add some green onion. I'm going to add some chopped green bell pepper and I'm going to use some crumbled cotija cheese which is used a lot in Central American cooking. Then here's some chili powder, some lime juice, some olive oil and some salt. It's very simple. It's very tasty. You can smell the lime juice and there you have a Salvadoran potato salad.
