Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a marinated redskin potato salad. Now redskin potatoes have a really nice flavor and they also because they are red on the outside they add more color to what you are making then if you are using a regular white skinned potato salad. So for a marinated potato salad it's good to start with potatoes that are a little warm. Because when they are warm they soak up flavor better. I have cut the potatoes into bite size pieces and then cooked them for five to ten minutes. So you want them to be soft but not mushy. I'm going to marinade it with some red wine vinegar. Some olive oil. A little bit of mustard, some dill, some salt, and some black pepper. So what I'm basically doing is making almost a salad dressing. Just pouring the ingredients on here. Then I'm going to toss the potatoes with them. And if you give it 20 minutes or so to marinate it's going to be even tastier then if you serve it right away. The flavors are going to work it's way into the inside of the potato so it's tasty all the way through instead of just on the outside. And there you have a marinated redskin potato salad.
