Hi, I'm Devra Gartenstein with Quarky Gourmet. Today, I'm going to show you how to make a southwest potato salad. This is a potato salad with Tex-Mex flavors. Got some chili pepper, some chili powder, cilantro, lime juice. So I'm going to start with some cooked potato. I cut it up and then boil the pieces for just about five to ten minutes until they became soft but not mushy. I'm using a serrano pepper. It's hotter than a jalape?o?o, not as hot as a habanero. You'll notice I'm wearing gloves, that's no accident because chili peppers can burn your eyes. So I'm cutting this into thin slices. Going to add it to the potatoes. Going to chop some cilantro leaves. I'm also going to add some bell pepper because it's nice to have some crunch and you don't want to put too much of the serrano in there. There we go. And some sliced black olives. Here I have some chili powder. Little bit of salt. I'm using a mild chili powder because you already have plenty of heat from the chili. There's some black pepper. I'm going to season this. I'm going to dress it with lime juice and olive oil. And there you have southwest potato salad.
