Hi, I'm Devra Gartenstein with Quarky Gourmet. Today, I'm going to show you how to make a lemon garlic potato salad and this is a very simple potato salad, but it's really special because the garlic and the lemon just add a lot of flavor and it makes a really different kind of potato salad. So I'm going to start with a couple cloves of garlic. Easiest way to peel garlic is to just smash it with the side of the knife. Then the peel comes right off. There you go. Save hours of your life. OK then I'm going to chop this real small. Then I'm going to sautee it in a little bit of olive oil. I'm going to use really low heat. And you really only have to sautee garlic for less than a minute. When you start to smell it then you know it's ready. And you definitely don't want to overcook it because when you brown it it just takes on a really different flavor. OK. And I can smell that already, so I'm going to call it done. Now I'm going to toss this with some red potatoes. I've cut them into bite sized pieces and cooked them for five to ten minutes. That's long enough to make them soft but not long enough to make them mushy. So some sauteed garlic, some lemon juice, some salt, and some black pepper. And there you have a lemon and garlic potato salad.
