Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a green bean and fingerling potato salad. Now fingerling potato small, long, kind of sometimes knobby potato. It's got a great flavor, it's kind of nutty. And it's a great thing to use in a potato salad if you just get tired of all of the conventional things you usually do with potato salads. So I precooked these. And I didn't cut them to cut them because they're just the right size to cook just the way they are. But I am going to cut the bigger ones in half for my potato salad. And I'm going to leave these smaller ones just the way they are. Now I'm going to use green beans as well. I'm not going to cook the green beans at all because I want them to be nice and crunchy. So I'm just trimming the ends. And then I'm going to cut them into about one and a half inch lengths. I'm using about as many green beans as potatoes. And then I'm going to add some sweet red pepper, a little bit of grated carrot. Here is some flat leaf Italian parsley. It has more flavor then the curly parsley but you can use either. I'm going to add some fresh lemon juice. And some olive oil, some salt, and some black pepper. Now if you let this sit for a little while before you serve it, it will get even tastier cause the potatoes and the green beans, and all the rest of the ingredients can soak up the dressing. And get nicely marinated. But it's tasty right as it is. So there you have a green bean and fingerling potato salad.
