Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a kale pasta salad. Kale is a hearty leafy green. It's really good for you. It's in the Brassica family which is broccoli, collared greens, cauliflower but it's a leafy green. It's used a lot in salad bars but it's not just for salad bars. Now I usually take the stems out of my kale because I'm all for using as much of a vegetable as I possibly can but these stems can get really tough. So a really simple way to take the stem out of a kale is to just grasp it here and go like that. The stem is all gone. So I shredded my kale finally and I steamed it for just about two minutes. I don't want to overcook it but it can be really tough when it's raw. So here I have some Rotini pasta. It's spiral pasta. I'm going to mix the steamed shredded kale with the Rotini pasta and then I'm going to dress it very simply with some olive oil, some red wine vinegar, some salt and some black pepper. And there you have a kale pasta salad. It's a great salad to make if you want to have fresh vegetables and a pasta salad in the middle of the Winter. It's really tasty, really good for you.
