Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a Mediterranean orzo salad. Orzo is a pasta that is shaped kind of like grains of rice but bigger. When you cook orzo you want to boil the water, put it in and pay a lot of attention to it. You want to stir it as soon as you add it to the water because it's really likely to stick to the bottom. It's also really likely to stick together. It has more surface area than most other kinds of pasta because you know, it's a lot of small pieces. It also will cook more quickly. So you want to keep an eye on it. I actually tend to drain my orzo before it's 100% cooked, you know, just a tiny bit crunchy in the middle because it's going to keep cooking after you drain it. So I drained it and then I ran some water through it and running the water through it rinses some of the starch away and makes it less sticky. I'm going to toss it with olive oil but I'm going to use less olive oil than I would have used if I hadn't tossed it in water. So here I have the orzo. I'm going to add some chopped fennel. Fennel is used a lot in Mediterranean food. It's a little like celery but it has a nice licoricy kind of flavor and then I'm going to add some chopped tomato, some fresh lemon juice, some olive oil and a little bit of salt and some black pepper. So you just want to make sure everything is nicely mixed and there you have a Mediterranean orzo salad.
