Hi, I'm Debra Gartenstein with Quirky Gourmet. Today I'm going to show you how to make a Greek orzo pasta salad. Orzo is a pasta that's used a lot in Greek food. It is shaped like large grains of rice so you're going to pay a lot of attention to it when you're cooking it. You want to put it in boiling water and then you want to stir it right away. If you don't, it's going to stick to the bottom and then you want to keep stirring it more frequently than you would stir most other kinds of pasta. It has more surface area because the pieces are so small and the extra surface area makes it more likely to stick together. It also cooks more quickly than other kinds of pasta so you don't want to overcook it. So I have cooked my orzo pasta. I've drained it. I ran some cold water through it to make it a little less starchy and then I put just a little bit of olive oil on it to keep it from sticking together while I'm waiting to mix it in with the other ingredients for the pasta salad. So I'm going to use some feta cheese with it which is always beautiful in pasta salads especially Greek pasta salads. I'm going to use some sliced kalamata olives which are a really strong flavored salty Greek black olive. I'm also going to use some pepperonchini and pepperonchini is a Greek pickled pepper. It's got a really strong flavor. I'm going to slice it really thin. These can be a little spicy but they're really tasty and then I'm going to use a sweet red pepper. I'm going to put some of that in just for the color and for the sweetness and I'm going to dress this really simple with some olive oil, some red wine vinegar, some salt and some black pepper, mix it altogether and there you have a Greek orzo pasta salad.
