Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to talk to you about spinach for cold pasta salad. Now, spinach is a great ingredient to use in a pasta salad. It's light and fluffy. It provides a great counterpoint to the pasta, which can be kind of dense. Now, when you're using spinach in a pasta salad, it's very important for the spinach to be really fresh, and also for the pasta to be fully cooled, because if the pasta is even a little bit warm, it's going to wilt the spinach almost immediately, and then it's not as perky as it should be. So, I'm going to show you very quickly how to make a simple pasta salad using spinach and cold pasta. This is Penne pasta, tubular. And, this is some spinach that I got. Actually, I'm lucky to shop at a place that has a bin of bulk spinach. So, I didn't even have to clean it. Removing a couple of stems, but most of the stems are already taken off. I'm going to add some poppy seeds, because poppy seeds go great with spinach and pasta. Then, a little bit of lemon juice. Little bit of olive oil, some chopped green onions, some salt, and some pepper. And, that is how you use spinach for a cold pasta salad.
