Hi, I'm Devra Gartenstein, author of "The Accidental Vegan", today I'm going to show you how to make a vegan gyro sandwich. This is a very simple recipe, you use some very tasty ingredients. Instead of the tzatziki or yogurt sauce that you traditionally use in a gyro sandwich, I'm going to make a simple tahini sauce. So here's some tahini, I'm going to use the tahini from the top of the can, because tahini tends to settle, thicker stuff is on the bottom, lighter stuff is on the top, I'll use the stuff on the bottom for humus or something where it gets pureed and I don't have to mix it by hand. So a couple of tablespoons of tahini, put in some fresh lemon, some olive oil, some salt, then we're going to add just a little bit of water to thin it out, so I'm just going to mix it until it's smooth. I'm going to put a little bit of tahini sauce on the pita bread, I'm using a flat Greek pita bread, which you wrap around the gyros. Then I'm going to put some seitan or vegan wheat meat on top of this. This is homemade seitan, you can also get packaged seitan. And then I'm going to put a little bit of cucumber on top, and just a little more sauce. Now you'll notice that I have a piece of foil underneath the pita, and that's because this can be a messy sandwich. So if you wrap it up with foil underneath it, then you have a nice ready to eat vegan gyros.
