Hi, I'm Devra Gartenstein, author of "The Accidental Vegan". Today I'm going to show you how to make delicious vegan mayonnaise. This is a very simple recipe and it tastes an incredible amount like regular mayonnaise. So I'm going to start with silken tofu. Silken tofu is the softest tofu. It has a really high water content which is what makes it so soft. That's the difference between a hard tofu and a soft tofu. In fact if you want to make your soft tofu a little more firm you just put it in a colander with weight on top and that's going to take some of the moisture out if it and that's going to make it more firm. So I've got this in the food processor. I'm going to add some olive oil, some lemon juice, some salt. I'm using about a quarter teaspoon of salt in about half a pound of tofu. And then I'm just going to puree this until it's smooth. It only takes a minute or so. And there you have a delicious vegan mayonnaise.
