Hi, I'm Devra Gartenstein author of "The Accidental Vegan". Today I'm going to talk a little bit about raw vegan side dishes. Now raw vegan side dishes are for all practical purposes are salads. So you can use almost anything that you want to use in a salad and I've got a variety of different ingredients here, you can use any of them by itself and season it or you can mix a bunch of things together. So here I have some chopped cucumber. I have some chopped fennel. It has a licoricy flavor. I like to use it in raw vegan side dishes because it adds a flavor that no other vegetable has. Here's some chopped shredded carrots. I have yellow carrots and orange carrots. I have a variety of lovely cherry tomatoes. These are sun golds and these are little Italian grape tomatoes. I have some chopped green onions. That will again add a different kind of flavor. Most of these are you know, the carrots and the tomatoes are sweet so this will add a more savory flavor to it and here's a chopped red bell pepper. So I'm just going to make a simple salad here with a little bit of each of these ingredients. And then I'm going to season it with some fresh lemon juice and a little bit of salt. And there you have a tasty idea for a raw vegan side dish.
