Hi, I'm Devra Gartenstein, author of "The Accidental Vegan". Today I'm going to show you how to make a vegan orzo salad. Now the only thing you would put in a traditional orzo salad that you wouldn't put in a vegan orzo salad is feta cheese. But fortunately there are so many other tasty things that you put in an orzo salad that you won't even miss the feta cheese. So here I have some orzo that I've cooked. It's, a friend of mine used to call it rice under a microscope. It's a pasta that's shaped kind of like rice. When you cook orzo you want to pay really close attention to it. First of all it cooks a lot faster than other pastas because the other, because the pieces are so much smaller and also when you first put it in the pan it's really easy to burn it and have it stick to the pan so you want to stir it as soon as you put it in there and then keep stirring it for a minute or two. Now I'm going to add some chopped cucumber. I'm going to add some cherry tomatoes I've cut in half, a couple green onions and here I have some sliced kalamata olives. Kalamata olives, it's a Greek olives, it's pretty salty, a little bit goes a long way and then I'm going to season this with some fresh lemon juice, some olive oil, some salt, some black pepper and then I'm also going to use a little bit of dried spearmint. So it's a Greek recipe and I like mint in Greek recipes. Just mix that up together and there you have a vegan orzo salad.
