Hi. I'm Devra Gartenstein, author of The Accidental Vegan. Today I'm going to show you how to make vegan baked eggplant. This is a nice hearty dish. I'm going to use a cheese sauce that I made out of nutritional yeast, flour and mustard. And just you know, bake the eggplant in it like a little casserole. I'm using a Japanese eggplant. It's smaller and longer than a conventional Italian eggplant. So, I'm just going to slice this quarter third inch slices. And I'm going to put a little bit of the vegan cheese sauce in the bottom of the pan and spread it. I'm going to arrange the eggplant slices on top of it and use the smaller slices to get in to those spaces where only they will fit. Going to put another layer of the cheese sauce, and then a few more slices, and a little bit more of the sauce. And then I'm going to sprinkle a little bit of paprika on top just to make it pretty. And I'm going to bake this for about forty five minutes until it's all cooked through. Now, the baked eggplant has cooked for about forty five minutes. I'm going to pull it out of the oven. It should have the consistency of soft Tofu. So, there that's done. And there you have vegan baked eggplant.
