Hi, I'm David Alemian, and I'm a foodie. Today, we're going to make Caribbean jerk chicken salad. And what we're going to do is, earlier, we made some baked Caribbean chicken, which is jerk chicken. And I've baked it, cut up the chicken. And we have some breast meat here, and a little bit of the leg meat. So, we've got a mixture of white meat and dark meat. All we're going to do, is we're going to take our knife and cut this chicken up into very small pieces, just like so. This goes together so quickly. As soon as we're done with that, we're simply going to just put it in that bowl, right in front of me. Our other ingredient is going to be little parsley and some fat-free Mayo. And we're simply just going to take this and put it right into the bowl, right here, just like that. Let's take some nice, fresh parsley and just give it a good chop. We're going to mix it right in with the chicken and then, we're just going to add a little fat-free Mayo. This is a simple, quick recipe, that it's great to make with leftover Caribbean baked chicken, because it just has so much flavor. O.k., so, there we go. Now, today, I'm just making this with parsley, Caribbean jerk chicken and fat-free Mayo. But you can add, you can also add, along with the parsley, to the chicken. You can add some finely chopped celery, which give it a little crunch. You can also add some finely chopped sweet red pepper. Either or a combination of all of those, or just plain, old parsley and the chicken, works perfect. Because the real flavor is going to come from the Caribbean baked chicken. And the flavors are so, so wonderful. And there you have it, a nice, easy recipe, your family will absolutely ask for this again and again and again. Because this is just so much better than your typical, boring chicken salad, a straight chicken salad. And there we are, I'm David Alemian, I'm a foodie.
