Hi, I'm Ellen Adams from RedHotDish.com and today I'm going to show you how to make a low sodium potato salad. I've got about two pounds of regular potatoes here and they've been boiled and they're about cube size and you'll know when your potatoes are done when you can stick a fork in them and it goes in very easily. That's about the consistency you want for potato salad. So, they're about bite size. And now I'm going to add half a cup of mayonnaise. Alright, so we'll go ahead and get that in there. To our potatoes I'm going to add a few turns of crushed black pepper. It's about an eighth of a teaspoon. I've got about two ribs of celery that's been diced up. Give our salad a little crunch. Got a teaspoon of salt. Two tablespoons of apple cider vinegar and about a half a cup of red onion and that's all been chopped up. You're going to put that in and I'll give it a quick fold. And there you have low sodium potato salad.
