Hi, I'm Ellen Adams from Redhotdish.com, and today I'm going to show you how to make a low carb potato salad. For this faux potato salad I'm using cauliflower, there we go, cut up our cauliflower, there we go, a couple more pieces and that should do it. So that's the base of this salad. I've got two thirds of a cup of mayonnaise and you can use whatever kind of mayonnaise you like, fat free, low fat, full on fat, whatever is your preference. To give this salad some color I've got about half of a green pepper that I've diced up and you're just going to dump that right in and then I have two teaspoons of mustard. And this is just yellow mustard but if you wanted to have a little spice to it you could use a spicy brown mustard. You could use whatever kind of mustard you prefer and then to top it off it's going to have two eggs. Now these I hard boiled already and what I do is I just put them in a saucepan, cover them with water and then you put them to boil and once you get a rolling boil in your pot, turn the stove off, put the lid on and let your eggs go for another 20 minutes or so and they will be perfectly done. So this is an egg slicer. It's got some wires right here so I just put my egg right in it, push the wires through the egg. Now I'm going to pick the egg up and turn it the other way, push the wires right through and they will be perfectly chopped. Look at that, nice, fun for the kids to do if you're having a cooking day with your kids. So what we're going to do is just pick it up, turn it the other way and run the egg wire right through there and dump it in and you'll see when you go to fold it together, the eggs will fall apart and have a nice dice. So I'm just going to fold this together so that all of my cauliflower has some of the dress on it and you want to go from the bottom and fold it over the top. This will keep the cauliflower from breaking up and it will get that mayonnaise and mustard all incorporated in our egg and our pepper. Alright, looks good. So this is a low carb option if you're trying to watch your carbs but you still want the flavors of a potato salad. So once you get it all incorporated, take a little paprika and sprinkle it right on the top and there you have a low carb potato salad.
