Hi, I'm Ellen Adams from, and today I'm going to show you how to make a potato salad with carrots. I've got about two pounds of regular potatoes here and they've been boiled and they're about cube size and you'll know when your potatoes are done when you can stick a fork in them and it goes in very easily, that's about the consistency you want for potato salad. So they're about bite size and now I'm going to add half a cup of mayonnaise. Alright, so I'll go ahead and get that in there. To our potatoes I'm going to add a few turns of crushed black pepper. It's about an eighth of a teaspoon. I've got about two ribs of celery that's been diced up, give our salad a little crunch. I've got a teaspoon of salt, two tablespoons of apple cider vinegar and about half a cup of red onion and that's all been chopped up and you're going to put that in and now give it a quick fold. Next I'm going to add the equivalent of about two carrots that have been shredded. I did these in my Cuisinart but you could certainly do them on like a cheese grater, run it down a box grater and you've got shredded carrots. So I'll just give that a quick fold in just like that, you want to get them incorporated so all of the potatoes and the carrots are nicely folded together just like that. There we go and there you have carrot potato salad.
