Hi, I'm Devra Gartenstein with "Quirky Gourmet". Today, I'm going to show you how to make a spinach and lentil salad. Spinach and lentils are both used a lot in Mediterranean foods so for this salad I use Mediterranean flavors. I'm going to use lemon and then I have some fresh mint, some fresh parsley and of course, olive oil. So, chop the mint. I'm using flat leaf Italian parsley because I really like the flavor. You can use curly leaf parsley as well. I'm going to toss these herbs with it. I'm going to add some cooked lentils. I'm using French lentils. They keep their shape much better than the gray green lentils that you use for soup. I'm going to dress this with some fresh lemon, a little bit of olive oil, some salt and some black pepper. I'm going to toss it with tongs. Tongs are really good for raw spinach because they grip it. And there you have a spinach and lentil salad.
